Ability to customise the logging information sent to the API Manager analytics via the activity-log policy

There are currently three options available to perform API event based logging, via the API assembly namely:
(1) activity logging
(2) header logging
(3) payload logging
For a high-volume API, we have a requirement to perform custom HTTP header logging for any API events and require the ability to select the HTTP headers in the request/response which, if presented, need to be sent to the analytics sub-system. When we implement option (2) above, all HTTP headers are logged which, for a high-volume API, consumes a significant amount of unnecessary disk space on the API Manager analytics and increases the amount of data which needs to be processed via elasticsearch/kibana.

This was delivered as part of the v10.0.x release stream. IBM API Connect now provides a Log Policy on the pallet for the newer APIGW Service. It is not available on v5c and we will not be adding to that service type.
