Enable request/response logging using Log Category

Hi Team,

There was requisitioned to log latency, request and response payloads without modifying service config, code and enable probe for specific services for troubleshooting purpose in a production environment.

Currently DataPower gateway provide a way to log latency by setting log category equal to latency, service subscription equal to service name and log level. The same way cannot log inbound request and outbound response.

It is better to have out of the box implementation for logging the request and response using the same approach or some other technique.
