OpenAPI Specification v3 specifies the use of CommonMark (https://spec.commonmark.org/) as a markdown syntax so that is what IBM uses. OpenAPI v2 supported GitHub Flavored Markdown spec so at that point we did use to support their syntax extensions for tables.
CommonMark does not define a table creation syntax but can include HTML Blocks as part of the definition. If you would like IBM to support other rich text formats not specified in the OpenAPI Spec please vote and comment on the following request: https://integration-development.ideas.ibm.com/ideas/APICONN-I-864
